Come Conciencia is born as a gastronomical project conceptualized by chefs Mónica Kisic, Gabriel Ximenes, Yhanto Nieto and Gustavo Alba. Through games and suggestions incorporated in the menu, Come Conciencia evokes 6 elements that are slowly losing strength in day-to-day dining. These elementary values are: time, trust, forgotten products and techniques, respect, home and sharing.
The first one, time, is represented by music played throughout the entire dinner, connecting all elements. Pianist and Composer Eric Maltz and artist Annika Kappner participated in this project to create a completely immersive tasting experience.
This new concept broke the limits of the kitchen looking to engage all senses to convey meaning. The whole menu tells a story based on emotions and values, the plates were especially designed to convey these sensations in coordination with the music and art.
Come Conciencia has evolved into a multidisciplinary project that speaks in the languages of cooking, music and visual arts about our consciousness, our relation to what it means to be human, about the evolution of our roots, the wisdom of nature and the resulting harmony.
